Sa conclusion g\u00e9n\u00e9rale est que des concentrations \u00e9lev\u00e9es de CO\u2082 ont tendance \u00e0 modifier la composition des plantes en augmentant leur teneur en carbone et en glucides, tout en r\u00e9duisant les concentrations de plusieurs min\u00e9raux essentiels et, souvent, de prot\u00e9ines.<\/p>\n<h4>Effet de dilution<\/h4>\n<p><span class=\"Y2IQFc\" lang=\"en\">On soup\u00e7onnait d\u00e9j\u00e0 que notre alimentation \u00e9tait moins nutritive qu'auparavant. Les scientifiques de Leyde viennent toutefois de le confirmer \u00e0 l'issue de recherches approfondies : les plantes poussent plus vite en raison de l'augmentation du CO\u2082, mais cet exc\u00e8s de carbone les am\u00e8ne \u00e0 produire davantage de glucides \u2013 et donc \u00e0 contenir plus de calories. Par cons\u00e9quent, le changement climatique rend notre alimentation moins nutritive mais plus riche en \u00e9nergie.<\/span><\/p>\n<p>L'explication courante \u2014 \u201c la plante grandit, ce qui fait que les m\u00eames min\u00e9raux sont dilu\u00e9s dans une biomasse plus importante \u201d \u2014 est en partie correcte, mais incompl\u00e8te. Une concentration plus \u00e9lev\u00e9e en CO\u2082 rend la photosynth\u00e8se plus efficace ; les plantes capturent davantage de carbone et produisent plus de sucres, d\u2019amidon et d\u2019autres glucides. Le carbone augmente donc plus rapidement que les nutriments tels que le fer, le zinc et l\u2019azote, ce qui cr\u00e9e un effet de dilution.<\/p>\n<h4>Carence en fer<\/h4>\n<p><span class=\"Y2IQFc\" lang=\"en\">Ces diff\u00e9rences sont imperceptibles et souvent ind\u00e9tectables au go\u00fbt. Pourtant, pour les personnes d\u00e9j\u00e0 au bord de la malnutrition et qui d\u00e9pendent de quelques aliments de base, comme le riz ou le bl\u00e9, cette baisse de la valeur nutritionnelle peut faire une diff\u00e9rence consid\u00e9rable.<\/span><\/p>\n<p><span class=\"Y2IQFc\" lang=\"en\">Selon l'Organisation mondiale de la sant\u00e9 (OMS), 40% de jeunes enfants et 37% de femmes enceintes dans le monde souffrent d'an\u00e9mie, souvent due \u00e0 une carence en fer. La qualit\u00e9 des c\u00e9r\u00e9ales influe \u00e9galement sur la valeur nutritionnelle des p\u00e2tes, et un soja moins nutritif signifie que le b\u00e9tail re\u00e7oit moins de nutriments. Cependant, la meilleure solution pourrait bien \u00eatre de r\u00e9duire les \u00e9missions de CO\u2082 afin d\u2019\u00e9viter une nouvelle d\u00e9gradation de la qualit\u00e9 des aliments.<\/span><\/p>\n<h4><span class=\"Y2IQFc\" lang=\"en\">Et qu'en est-il des prix des denr\u00e9es alimentaires ?<\/span><\/h4>\n<p><span class=\"Y2IQFc\" lang=\"en\">La dilution des nutriments provoqu\u00e9e par le CO\u2082 ne rend pas n\u00e9cessairement le bl\u00e9 ou le riz plus chers au kilogramme. Gr\u00e2ce \u00e0 l\u2019effet traditionnel de fertilisation par le CO\u2082, les agriculteurs pourraient produire davantage de tonnes de bl\u00e9 \u00e0 un co\u00fbt identique, voire inf\u00e9rieur. Mais ces tonnes contiendraient moins de nutriments. Et t<\/span>Le prix par calorie et le prix par nutriment pourraient diverger.<\/p>\n<p>Pour les populations les plus d\u00e9munies, qui d\u00e9pendent fortement du riz, du bl\u00e9 ou du ma\u00efs, les cons\u00e9quences pourraient \u00eatre bien plus graves. Il est possible de consommer suffisamment de calories tout en souffrant de carences en micronutriments. L'agriculture pourrait compenser en partie la baisse de la densit\u00e9 nutritionnelle, mais ces mesures ont un co\u00fbt.<\/p>\n<p>En conclusion : le changement climatique pourrait entra\u00eener une hausse du co\u00fbt de l'alimentation, m\u00eame si les exploitations agricoles produisent davantage de calories. En Belgique et aux Pays-Bas, une augmentation des \u00e9missions de CO\u2082 pourrait se traduire par des rendements plus \u00e9lev\u00e9s pour certaines cultures, mais avec une teneur en nutriments par kilogramme plus faible.<\/p>\n<p>En cons\u00e9quence, l'intensification de la s\u00e9lection, de la fertilisation et des contr\u00f4les de qualit\u00e9 entra\u00eenerait une hausse des co\u00fbts de production.
