{"id":192343,"date":"2026-08-24T12:10:16","date_gmt":"2026-08-24T10:10:16","guid":{"rendered":"https:\/\/newmobility.news\/?p=192343"},"modified":"2026-08-24T12:02:09","modified_gmt":"2026-08-24T10:02:09","slug":"higher-co2-levels-make-food-more-calorie-dense-but-not-more-nutritious","status":"publish","type":"post","link":"https:\/\/newmobility.news\/nl\/2026\/08\/24\/higher-co2-levels-make-food-more-calorie-dense-but-not-more-nutritious\/","title":{"rendered":"Hogere CO\u2082-concentraties zorgen ervoor dat voedsel meer calorie\u00ebn bevat, maar niet voedzamer is"},"content":{"rendered":"<p>Wetenschappers van de Universiteit Leiden hebben aanwijzingen gevonden dat planten sneller groeien als gevolg van een toename van<span class=\"Y2IQFc\" lang=\"en\">\u00a0CO2.\u00a0<\/span><span class=\"Y2IQFc\" lang=\"en\">De keerzijde is dat ze meer calorie\u00ebn bevatten, maar minder voedzaam zijn. <\/span><span class=\"Y2IQFc\" lang=\"en\">De voedingswaarde van vrijwel alle gewassen is afgenomen \u2013 planten<\/span><span class=\"Y2IQFc\" lang=\"en\"> minder eiwitten, ijzer en andere voedingsstoffen bevatten.\u00a0<\/span><\/p>\n<p>In het Leidse onderzoek werden duizenden waarnemingen van tientallen gewassen en voedingsstoffen gebundeld. De algemene conclusie luidt dat een verhoogd CO\u2082-gehalte de samenstelling van planten doorgaans doet verschuiven naar een hoger gehalte aan koolstof en koolhydraten, terwijl de concentraties van verschillende essenti\u00eble mineralen en vaak ook eiwitten afnemen.<\/p>\n<h4>Verdunningseffect<\/h4>\n<p><span class=\"Y2IQFc\" lang=\"en\">Er bestond al het vermoeden dat ons voedsel minder voedzaam was dan vroeger. Toch hebben wetenschappers in Leiden dit nu na uitgebreid onderzoek bevestigd: planten groeien sneller door de toegenomen CO2-concentratie, maar de extra koolstof zorgt ervoor dat ze meer koolhydraten produceren \u2013 en daardoor meer calorie\u00ebn bevatten. Als gevolg daarvan zorgt de klimaatverandering ervoor dat ons voedsel minder voedzaam is, maar meer energie bevat.<\/span><\/p>\n<p>De gangbare verklaring \u2014 \u201cde plant wordt groter, waardoor dezelfde mineralen over meer biomassa worden verdund\u201d \u2014 is deels juist, maar onvolledig. Meer CO\u2082 maakt fotosynthese effici\u00ebnter; planten nemen meer koolstof op en produceren meer suikers, zetmeel en andere koolhydraten. Koolstof neemt daardoor sneller toe dan voedingsstoffen zoals ijzer, zink en stikstof, wat een verdunningseffect veroorzaakt.<\/p>\n<h4>IJzertekort<\/h4>\n<p><span class=\"Y2IQFc\" lang=\"en\">De verschillen zijn onzichtbaar en vaak niet waarneembaar aan de smaak. Toch kan de daling van de voedingswaarde een aanzienlijk verschil maken voor mensen die al op de rand van ondervoeding staan en afhankelijk zijn van een paar basisvoedingsmiddelen, zoals rijst of tarwe.<\/span><\/p>\n<p><span class=\"Y2IQFc\" lang=\"en\">Volgens de Wereldgezondheidsorganisatie (WHO) lijden wereldwijd 40% jonge kinderen en 37% zwangere vrouwen aan bloedarmoede, die vaak wordt veroorzaakt door ijzertekort. In het ergste geval belemmert ijzertekort de cognitieve ontwikkeling van kinderen. <\/span><\/p>\n<h4>Kwantiteit of kwaliteit?<\/h4>\n<p><span class=\"Y2IQFc\" lang=\"en\">Volgens de onderzoekers is er lange tijd veel te weinig aandacht besteed aan de voedingswaarde. De nadruk lag op de opbrengst,\u00a0<\/span><span class=\"Y2IQFc\" lang=\"en\">met name voor rijst, ma\u00efs en tarwe. Dat is vandaag de dag nog steeds zo.\u00a0<\/span><span class=\"Y2IQFc\" lang=\"en\">Door droogte en veranderende neerslagpatronen mislukken de oogsten echter, of is landbouw in sommige gebieden niet langer mogelijk. Als ook de voedingswaarde afneemt, heeft dit gevolgen voor onze gezondheid.\u00a0<\/span><\/p>\n<p><span class=\"Y2IQFc\" lang=\"en\">Het gaat ook niet alleen om de hoeveelheid groenten die we eten. De kwaliteit van het graan is eveneens van invloed op de voedingswaarde van pasta, en minder voedzame soja betekent dat vee minder voedingsstoffen binnenkrijgt. Dat heeft gevolgen voor de kwaliteit van het vlees \u2013 en, wat dat betreft, ook voor de kwaliteit van vleesvervangers die soja bevatten.<\/span><\/p>\n<h4>Meer gevarieerde maaltijden<\/h4>\n<p><span class=\"Y2IQFc\" lang=\"en\">De wetenschappers zijn in ieder geval van mening dat het probleem niet zal worden opgelost door simpelweg meer te eten van de gewassen die momenteel worden geteeld. \u201cHet caloriegehalte stijgt in verhouding tot het gehalte aan voedingsstoffen, en de meeste mensen nemen al te veel calorie\u00ebn tot zich. We moeten vooral ons voedingspatroon afwisselender maken.\u201d<\/span><\/p>\n<p><span class=\"Y2IQFc\" lang=\"en\">Een mogelijke oplossing zou kunnen zijn om bepaalde gewassen te \u2018veredelen\u2019 \u2013 door gebruik te maken van verbeterd zaad of door voedingsstoffen aan de bodem toe te voegen of rechtstreeks op de planten te sproeien. De beste oplossing is echter wellicht om de CO\u2082-uitstoot te verminderen, om verdere verslechtering van de voedselkwaliteit te voorkomen.<\/span><\/p>\n<h4><span class=\"Y2IQFc\" lang=\"en\">Hoe zit het met de voedselprijzen?<\/span><\/h4>\n<p><span class=\"Y2IQFc\" lang=\"en\">De door CO\u2082 veroorzaakte verdunning van voedingsstoffen maakt tarwe of rijst niet per se duurder per kilogram. Dankzij het traditionele CO\u2082-bemestingseffect zouden boeren meer tonnen tarwe kunnen produceren tegen dezelfde of zelfs lagere kosten. Maar die tonnen zouden minder voedingsstoffen bevatten. En t<\/span>De prijs per calorie en de prijs per voedingsstof kunnen uiteenlopen.<\/p>\n<p>Voor armere bevolkingsgroepen die sterk afhankelijk zijn van rijst, tarwe of ma\u00efs, zouden de gevolgen veel ernstiger kunnen zijn. Mensen kunnen weliswaar voldoende calorie\u00ebn binnenkrijgen, maar toch te kampen hebben met tekorten aan micronutri\u00ebnten. De landbouw zou de afname van de voedingswaarde gedeeltelijk kunnen compenseren, maar deze maatregelen hebben een prijs.<\/p>\n<p>Kortom: klimaatverandering zou voeding duurder kunnen maken, zelfs als landbouwbedrijven meer calorie\u00ebn produceren. Voor Belgi\u00eb en Nederland zou een hogere CO\u2082-concentratie bij sommige gewassen tot hogere opbrengsten kunnen leiden, maar met minder voedingsstoffen per kilogram.<\/p>\n<p>Als gevolg daarvan zouden meer veredeling, bemesting en kwaliteitscontrole de productiekosten doen stijgen.
